Creamy Chicken
Tortellini Soup
Ingredients
½ cup diced onion
½ cup diced bell pepper
6 sun dried tomatoes, chopped (save the oil)
2-3 tsps minced garlic
½-1 cup grated parmesan cheese
1 cup chopped spinach
2 cups chopped chicken, cooked
2 – 2/12 cups cheese tortellini pasta
8 cups chicken broth
2 cups heavy whipping cream
Directions
1. In a large stock pot, heat 1-2 tablespoons of your reserved sun dried tomato oil over medium-high heat.
2. Sauté onion and bell pepper until soften (about 3-5 minutes)
3. Add tomatoes and mince garlic and cook until fragrant (about 3 minutes)
4. Add chicken broth and bring to a boil.
5. Add pasta and chicken and boil until pasta is cooked. Be careful not to overcook your pasta!
6. Turn your heat down to medium, add cream and cheese, stir well. Allow to simmer for about 3 minutes.
7. Top with a sprinkle of grated parmesan cheese, serve, and ENJOY!
