Turkey Lettuce Wraps

Serves: 4
Ingredients:
Filling:
1 lb ground turkey
1 tablespoon vegetable oil
4 scallions, sliced
¾ - 1 cup shredded carrots
3 cloves garlic, minced
1 tablespoon ginger, minced
½ - ¾ cup water chestnuts, roughly chopped
½ - ¾ cup Hoisin sauce, plus extra for serving
1 head of lettuce, washed and dried
Cilantro, chopped, for garnish
Crunchy chow mein noodles for garnish
Salt and pepper, to taste
Directions:
For the filling:
1. Brown the turkey in the oil in a large sauté pan over medium-high heat until no longer pink. Season with salt and pepper.
2. Add the scallions, garlic, ginger, carrots and water chestnuts, and cook until the mixture becomes fragrant.
3. Add the hoisin sauce and cook 1 minute. Remove from the heat.
4. Serve the turkey mixture with the lettuce leaves, drizzling sauce and vegetables for lettuce wrap assembly.
Note: I like to serve mine with plain Jasmine or Basmati rice and drizzled with a little extra Hoisin sauce and topped with crunchy chow mein noodles and chopped cilantro.
